Protein rich and comforting, this recipe is perfect for breakfast, lunch or even a quick dinner. Pair with fresh sourdough or roasted baby potatoes for a well-rounded meal. This egg bake provides healthy fats for hormone balance, essential vitamins like choline and b12, along with fiber to support digestion. Also.. it is delicious!
You’ll need:
One head of broccoli
8 eggs
1 cup of cottage cheese
1/2 cup of milk
4 slices of bacon, cooked and cut into smaller pieces
2 tbs of chopped leek or two cloves of garlic
A sprinkle of salt and black pepper
Optional: grated cheddar (or or cheese of choice!) on top before baking
Method:
Preheat your oven to 350 degrees F / 175 degrees C and grease a pie dish or baking dish of your choice.
Cook the bacon! You’ll want it just done, not too crispy. Once cooked, chop it up into small pieces so it will distribute evenly through the egg mixture.
Chop up the leek and broccoli into very small pieces. You’ll want to make sure it’s small enough so that it will cook through in the oven. Leave them on the chopping board while you mix up the eggs and other ingredients.
In a mixing bowl, add the eggs, cottage cheese, milk, cooled and chopped bacon, salt and pepper. Mix all of the ingredients together, until just combined.
Put the broccoli and leek in the pie dish and pour the egg mixture on top of the veggies. Pop in the oven for 45-50 minutes, or until the middle of the bake is cooked through. If there’s leftovers, store in the refrigerator.
